5.5 tonnes harvested – for a new wine style

5.5 Tonnen gelesen – für einen neuen Weinstil

This year, we processed a total of 5.5 tonnes of grapes into wine, but not the way we did in previous years: the 2026 vintage will yield completely different wines.

While in past years we fermented most of our wines on the skins—giving them at least a month with the skins, seeds, and yeasts—in 2026 we tried something new: after just a few days of skin contact, we drew off the juice and let it finish fermenting separately.

This approach allows us to produce lighter, fruitier, and silkier wines with fewer tannins.

In total, we processed 5.5 tonnes of grapes, which will yield approximately 1,500 bottles of Saperavi, 1,100 bottles of Kisi, 600 bottles of Khikhvi, and 200 bottles of Rkatsiteli.
