Taste and Style
This dry red wine is characterized by its round body, pleasant, gentle tannins, and multi-layered aromas. It features notes of blackberries, plums, and other dark fruits, complemented by a hint of pepper.
What is Saperavi?
Saperavi is the most widely grown red grape variety in Georgia. It is a Teinturier grape, meaning both the skin and the pulp are pigmented. This results in Saperavi wines having a signature deep, dark color.
Production in Stainless Steel
For this 2024 Saperavi, the grapes were harvested by hand, transported in small wooden crates, and manually sorted before pressing. The wine was fermented in stainless steel tanks, remaining on the skins for two weeks. As with all our wines, fermentation was triggered by indigenous yeasts found naturally on the grapes (spontaneous fermentation). Before bottling, the wine was allowed to mature in stainless steel tanks for 1.5 years.
Producer
Inavarde Wines is an owner-managed winery in Eniseli, a village in the Kakheti region of Eastern Georgia. Founded in 2020 by Swiss expat Fabio Bolognese, the estate produces between 4,000 and 5,000 bottles of natural wine annually from its own organic vineyards, with Saperavi accounting for about 1,200 bottles.

We believe that a thriving vineyard and exceptional grapes are the most important requirements for good wine. That is why we pour so much effort and passion into our organic vineyard. In the cellar, we only intervene when absolutely necessary.

Kakheti is located in eastern Georgia and is the country’s premier wine-growing region, home to roughly 75% of all vineyards. The continental climate—hot summers balanced by cool nights—and mineral-rich soils provide ideal conditions. Our vineyard is situated in one of the best micro-zones for the Saperavi variety.

Serving Tips
We recommend a serving temperature of 18–19°C. Decant the wine at least one hour before serving; the contact with oxygen helps to fully reveal its aromatic spectrum.
Storage
Saperavi wines are excellent for cellaring. Because this is a natural wine with no added sulfites or preservatives, it is essential to store it in a cool, dark place:
- 12°C to 17°C: Can be stored for several years.
- 18°C to 20°C: Best enjoyed within a few months or up to 1–2 years.
- Above 21°C: Consume within a few weeks or months.
