Qvevris are underground clay amphorae that have been used for wine production in the territory of present-day Georgia for over 8,000 years.
What makes Qvevri wine special?
Qvevri wine represents the original form of viticulture. The world's oldest traces of wine production were discovered in present-day Georgia – found within a clay amphora, a Qvevri.
We are deeply fascinated by this archaic, original form of winemaking. Qvevris are unique and offer many advantages. A Qvevri is buried in the ground only once and remains there forever. The ambient temperature is constantly cool, which is beneficial for both the fermentation and the aging of the wine.
The shape of the Qvevri, with its tapered bottom, is both fascinating and ingenious: when fermentation is complete, the grape seeds sink to the bottom. They are then covered by the yeast lees, which ensures that the wine only stays in contact with the skins.

Our vines are healthy because we use no chemicals and manage our vineyard 100% organically. Instead of using commercial yeasts, we rely on naturally occurring yeast cultures. They give our wines new and distinct notes every year.
In the cellar, we add nothing to our Amber wines – not even sulfites. Furthermore, we rely on natural filtration by allowing the sediments to settle on their own.

We leave both our Amber and red wines in the Qvevri for six to seven months.

Our largest Qvevris have a capacity of 1,000 liters. In addition, we have Qvevris in sizes of 800, 600, 500, 400, and 200 liters.

Our oldest Qvevri is approximately 70 years old. Our newer Qvevris were all crafted in 2022.

The most important principle is to avoid any detergents or chemicals when cleaning the vessels. We use only water and a great deal of strength and endurance. We scrub the inner walls of the Qvevri with a tool made of cherry tree bark, which contains natural, antiseptic properties.
