Natural dry amber wine produced from the grapes of the endemic Khikhvi variety, cultivated in our own organic vineyard located in the Georgian wine region of Kakheti.
Vintage
The year 2024 proved to be climatically ideal: we experienced ample sunshine, sufficient rainfall, and no issues with fungal infestations or other diseases.
Organic Vineyard
We manage our vineyard personally to ensure that we process only the highest quality grapes. Our vineyard is entirely organic; we do not utilize herbicides, pesticides, or any other chemical substances.
Natural Wine
We embrace spontaneous fermentation utilizing the naturally occurring yeast cultures present on the grapes. We allow the wine the time it requires to develop fully. Filtration occurs naturally, as the wine is transferred into a different vessel every two to three months, allowing for the removal of sediment. No fining, no clarification, and no addition of sulfites or other substances are employed.
Production Method
For the Khikhvi 2024, we pressed the hand-sorted grapes and placed the entire mash—juice, pulp, skins, and seeds—into a kvevri. Kvevris are egg-shaped clay amphorae embedded in the ground. After a month of 100% contact with the mash, we separated the wine and transferred it back into a kvevri, where it matured underground for an additional six months. Following another year in a stainless steel tank, we will bottle it.
Serving Suggestions
This dry, amber-hued wine pairs exquisitely with poultry, grilled vegetables, and cheese dishes. Recommended serving temperature: 15-17°C. Alcohol content: 14.0% vol.
