Saperavi dry red wine is produced from the Saperavi grape variety cultivated in our own vineyard within the strictly controlled Kindzmarauli microzone, Kakheti region, Georgia.
Organic vineyards
We cultivate our vines ourselves in order to be sure to have the highest quality grapes. Our vineyards are fully organic, as we neither use herbicides and pesticides nor any other chemical substances.
Natural wines
In our cellar, we use spontaneous fermentation by natural yeast species and natural filtration. No clarification, no fining, no addition of sulfites.
Production method
This wine was fermented with 100% skin contact according to the ancient Georgian tradition in a Kvevri, a clay amphora buried in the ground. In the Kvevri, it was on the mash for 8 months. Then, the wine was separated and matured for another 5 months in a stainless steel barrel before bottling.
Serving and food pairing
The wine has a full bouquet and comes with a lot of tannins. It matches well with red meat dishes, pork skewers, and hard cheese. Consuming temperature: 17-18°C. Decant 1 hour before drinking.
